VINEYARDThe grapes for this wines were sourced from 3 hectares of Le Sondraie vineyard situated 25 metres above sea level. Exposition is to the west. Soils here are free-draining and a mixture of clay and sandy silt with a high presence of magnesium and iron. Planting density is nearly 8000 vines per hectare. The vines are trained to the Guyot system and spur pruned and the age of the vines is 12 years. Yields are around 63 hectolitres per hectare.
WINEMAKINGAfter soft, whole bunch pressing, the must was fermented in temperature-controlled stainless steel tanks at 14oC - 16oC degrees for 20 days. No malolactic fermentation was allowed to take place and the wine remained on the fine lees until bottling to add complexity.
