VINEYARDSoils are clay and limestone. Manual harvest early in order to avoid higher alcohol production (which is typical for pecorino grapes).
WINEMAKINGThe grapes were de-stemmed and transferred to tank where maceration took place for 24 hours. The skins are then separated from the juice and softly pressed and transferred to the stainless steel tanks where indigenous yeasts lead the fermentation process. The wine rested in stainless steel tanks for a period of four months before the bottling.
