WINEMAKING
Grapes are destemmed and gently crushed, then transferred to stainless steel tank where indigenous yeasts lead the fermentation process. The grape skins are softly plunged into the juice, in order to prevent the extraction of the stronger tannins. The maceration process usually takes around one week after which the skins are separated from the wine and softly pressed. The wine rests in stainless steel tanks for a period of four months before the bottling.
Producer

Agricola Cirelli is an organic farm with 23 hectares of land in a stunning location at the foothills of the Abruzzo mountains in Pescara. Here the natural cycles of the environment are greatly respected and aside from wine, the farm produces olive oil, vegetables, fruit and meats of supreme quality. Francesco purchased the land in 2003 after his graduation from university. He has dedicated himself to organic agriculture ever since and is now helped out by his wife Michela. Francesco is a farmer who isn’t afraid to challenge conventions and this is reflected in his amphora-fermented wine. These clay vessels, custom built in Tuscany are of his own design with special stainless steel seals that prevent oxidation whilst still allowing the wines to remain fresh and vibrant in the neutral environment of the amphora.
