The wines name Les Turitelles is owed to the fact the soil's origin is composed of fossils that can still be seen in the vineyards today. These marine sediments are carried by a limestone and clay base, forming sloping plateaus in the landscape, on which the vineyard is located. This terroir in the foothills of the Pyrenees is known for the quality of its hillsides and its sunny and cool microclimate.WINEMAKING
As each grape variety matures, they are harvested and vinified separately.In order to obtain a clear juice from red-skinned grapes, they are delicately placed in the press by gravity and direct pressing is carried out quickly. The pressing is slow and the juices are refreshed and decant in stainless steel tank. After settling the alcoholic and malolactic fermentations take place in vats and the rearing on fine lees continues until February.
